Sprouted buckwheat pancake 発芽蕎麦の実パンケーキ


This is definitely one of our most favourite GLUTEN FREE breakfast dishes, especially on lazy Sundayzzz!

Super healthy, easy, very soft, fluffy and of course mega yummy ?


I used to make buckwheat pancakes with buckwheat flour for years. It was good, but certainly not something I would say “Wow, this is sooo yummy!” I was making it because I knew it’s better for my body than eating some other white flour or wheat pancakes. Then I discovered THIS recipe, using sprouted buckwheat (buckwheat soaked over night in water to activate). The outcome is not just yummy… it’s way beyond delicious and so much better for your digestion. Also, it’s a great dish to take to a gathering as it can easily be arranged with a variety of topping options to cater for people who prefer to have or must have a Gluten Free, Vegetarian or Vegan diet.

蕎麦粉を使ったパンケーキを昔からよく食べていたんですが、身体には良いと知っていても「うわぁー 凄いおいしい!」というわけではなく、ヘルシーという観点で選んでいたものです。が、この蕎麦の実パンケーキに出会ってからは、蕎麦の実パワーにびっくりしました。発芽させて、フレッシュに頂くって、こんなにも味に違いが出て美味しいんだーと。



  • 2 cups organic Buckwheat Kernels
  • 4 cups filtered water for soaking
  • 2 cups filtered water for pancake base
  • 3 tbsp Coconut oil
  • 1 tsp celtic salt or herb salt
  • 1 tsp aluminium free baking powder or Bi-carb
  • 1/2 tbsp Cumin powder
  • 1/2 tbsp Turmeric powder or freshly ground Turmeric

*Optional: 1/2 cup Chia seeds

  • 蕎麦の実 2カップ
  • 浄水 1&3/4カップ
  • ココナッツオイル 大さじ3
  • 天然塩 小さじ1 もしくはハーブソルト
  • 重曹 小さじ1
  • クミンパウダー 大さじ1/2
  • ターメリックパウダー 大さじ1/2


*Sweet option: Add dry apricot or dates instead of Turmeric and Cumin powder


Let’s prepare the yumminess: 準備しましょ!
1. Soak Buckwheat  –  蕎麦の実を浸ける

Soak 2 cups of buckwheat kernels in 4 cups of filtered water in a glass jar or bowl. Leave it overnight on the kitchen bench or put it in the fridge before you go to bed in the hotter months.


2. Blend it all  –  混ぜ合わせる

Rinse soaked buckwheat kernels and drain well. Place all other ingredients in the blender and blend until smooth. (Adjust the thickness as you prefer, by adding more water)


3. Cook in a pan  –  フライパンで焼く

Spread 1 tsp of Coconut oil in a nicely heated pan, pour the pancake base in with a ladle. You could make many little pancakes as finger food or massive ones for a big family breakfast. Either way, the base needs to be spread evenly, nice and thin but also thick enough to flip easily.

*Optional: Sprinkle some Chia seeds on top straight after pouring the pancake base into the pan.

Cook both sides and keep going…


It’s good to use lots of Coconut oil for frying and make sure to cook with an evenly heated hot pan to avoid burning the pan or pancake base. It might be a bit tricky to keep the right temperature in the beginning. The first few pancakes normally don’t look great and can be messy. You’ll get better with each new one though, keep going…

We encourage to not use a “non-stick pan”. We know, it’s very convenient, BUT can really affect your health. We recommend to rather use an “Eco/Green non-stick pan” or any other pans made from traditional materials.

ココナッツオイルを温めたフラインパンにひき、パンケーキ生地を流し込む。厚すぎす、薄すぎず、均等に広めて オプションでチアシードをパラパラっとまき、ポツポツと穴が空いてきたらひっくり返す。



4. Serving  –  いただきましょう

Totally dependent on availability of seasonal produce, we usually eat the pancakes with avocado, cucumber, tomatoes, any kind of sprouts and our Cashew cream cheese. These pancakes are very tasty as they are, but optionally you could add a nice savoury spread, Zucchini Hummus, Sun dried Tomato dip, Magic Omiso (Super yummy homemade Miso Paste)…etc. There are lots of Vegan options available.
