Mine and my family’s favourite coconut cake recipe is here!
Vegan, gluten free, sugar free, ORGANIC – cleanest cake for the children and of cause for us, too. We made this raw cake for our son’s 4years old birthday party. His request was “Chocolate cake” CHOCOLATE is something he has never had before. We have been keeping him away from all kinds of chocolate for long enough, so wanted to celebrate with those raw cakes for his patent and also our hard work to keep stay on the track. Also wanted to make them for all of his friend to enjoy without worry about ingredients! (unless you got nut allergies)

ヴィーガン(動物性食品を使用しない)、お砂糖もグルテンもフリーなこのケーキは、オーガニックの材料のみで作られたローケーキ。 それぞれの素材が持つ栄養分を身体がフルに吸収する為、そして消化を助ける為に、ナッツなどは全て前の日から水に浸し、熱を加えない方法で作られています。
美味しくて楽しいだけじゃない、とってもクリーンで栄養分の高いケーキ、こんなスペシャルなケーキをお誕生会に出せたら、アレルギーを持つお友達や、ヴィーガン、砂糖などを取らない食のスタイルお友達にも安心して食べてもらえる。そんな気持ちで作りました。
Get your ingredients (source locally and use certified organic)
Recipe is best for a very shallow 28cm size pop up tin, but please feel free to adjust the amount of ingredients if you need to.
Base
- 1 1/2 cups Almonds
- 1 cup Brazil nuts or Pecans
- 1/2 cup ground Flax Seed
- 2 tbsp Hemp nuts
- 1 cup of your favourite dry fruit mix (I use Sultanas and Apricot)
- 1 tbsp Goji Berries
- Pinch of salt
- 2 tbsp filtered water
- 3 tbsp coconut oil
*Optional – 1 tbsp of Spirulina or 1 tbsp of cacao powder or both if you like
Filling
- 1 1/2 cup Cashew & Macadamia nuts (if you want to make lighter taste you can use bananas instead)
- 1 tbsp pure Vanilla extract
- 1 fresh Coconut (juice & meat) or 1 can Coconut cream
- 1/2 cup extra virgin coconut oil
- 1/2 cup Coconut butter or Macadamia butter
- 2 tbsp Maple or Date syrup (I like to use very small amounts of sweetener as both the base and topping will be sweet anyway)
Let’s cook
Base
- Grind nuts in the food processor or powerful blender till they become fine,
- Add the rest of ingredients and blend well together
- Tip the base mixture into the pop up tin. Spread out evenly, firm and thin
Filling
- Same process as the base. Grind nuts in the food processor or powerful blender till they become fine
- Add the rest of ingredients in and blend well together
- Decorate with your favourite colourful fruit and put it in the fridge for a couple of hours until very firm
This is very important bit! please don’t for get to serve on the eco material plates if you are having a party. We used the leaves of banana tree 😉
